Thanks to restaurant SHIN aan de Rodezand, you don’t have to fly all the way to Japan for Japanese food. At SHIN, owners Tony and Nanako share all their favourite dishes and drinks, prepared by a certified chef from Japan, with the public.
JAPANESE TAPAS BAR AND MATCHA CAFÉ IN IZAKAYA STYLE
SHIN is a modern, cozy izakaya style Japanese tapas bar and matcha cafe. This concept comes from the restaurant owners Tony and Nanako, who also own the popular Japanese ramen restaurant Ajisan on the Coolsingel.
Japanese cuisine is much more than just sushi and ramen. But, as owner Tony soon noticed, not many Dutch people are familiar with the diversity that this unique cuisine has to offer. “There are a lot of Japanese dishes that we miss in the Netherlands. That is why we at SHIN put all our favourite dishes and drinks on the menu.” The basis of all dishes they serve at SHIN is dashi. This is a broth that they make fresh every day from dried bonito tuna and seaweed sheets.
Japanese whiskies and cocktails
The drinks menu features many different types of Japanese whisky, such as the popular Hibiki and local whiskeys made with groundwater from the Mount Fuji area. You can also drink classic cocktails with a twist, such as the MojiTokyo with Japanese sake for an extra taste sensation of the Matcha Martini, made with matcha powder.
